Boudin Balls

Fried Boudin Ball Recipe

Here's my basic fried boudin ball recipe.  Have fun experimenting with it !

 

Boudin Ball ingredients

  • 2-3 links of your favorite cooked Boudin
  • 1 -2 eggs slightly beaten ( feel free to add some Louisiana hot sauce or Tabasco sauce to the eggs)
  • 1 cups corn flour and 1 cup corn meal (mixed). (you may use one or the other, I just prefer both)
  • tsp of Basil
  • tsp of chopped parsley
  • tsp finely diced jalapeno ( no seeds) 
  • tbls finely diced onion
  • pinch of garlic salt
  • sea salt and coarse ground black pepper to taste
  • Balls Cajun seasoning to taste
  • Louisiana Hot sauce
  • Peanut oil for frying

     Heat the peanut oil to about 365 degrees. Mix the flour, corn meal, parsley, salt, pepper, basil, onions, jalapeno, garlic and Cajun seasoning in a bowl. Cut the casing from the Boudin and roll the insides into small balls, about golf ball size...no larger. Dip into beaten egg and then dredge through the corn flour mixture. Deep fry until lightly golden brown. (3-5 minutes) and drain on paper towels. Serve hot.  They go great with fried fish or grilled redfish.

     **Hint: Sometimes it's helpful to form the balls then allow them to sit in the refrigerator for 30 min. or so before dipping and frying them.  It seems to help them stay together at times, depending upon the boudin.
