Pork Chop Nuggets
While technically not an authentic Cajun dish, these simple bite sized pork chop nuggets are the original creation of my friend and fishing buddy Jorge, who owns several Mexican restaurants in my area. I've adapted it to the Cajun food palate. It's great to fry up a huge pan and watch your friends eat them like popcorn. Rumor has it, they go great with beer, but I wouldn't know......or at least I don't remember.
Cajun Pork Chop Nugget ingredients:
- Several thick sliced pork chops, cut into large bite sized chunks
- Ball's brand Cajun general purpose seasoning
- Fresh limes. Lot of them.
- Louisiana Hot sauce ( optional)
Method:
Cut the thick (3/4" or more) fresh pork chops into chunks, sprinkle some cajun seasoning over them and drop them in a deep fryer or hot pan with plenty of oil.
Fry them at 350 degrees until dark brown, remove to drain and sprinkle them with more cajun seasoning and liberally squeeze fresh lime juice over them. More lime is better than less.
Optionally drizzle some Louisiana Hot sauce over them and eat.
They go great with deep fried sliced eggplant, squash or corn on the cobb, which has been rolled in mustard and your favorite fish fry corn meal mixture. Wash it all down with your favorite beverage.

I don't eat them often, but when I do, I can't get enough of them.
