Cajun Boiled Potatoes
Here is how I get that authentic Cajun flavor in a simple potato dish.
This Cajun Potato recipe is the perfect side dish for Grilled Redfish.
In this Cajun potato recipe, you'll notice I haven't given measurements for any of the ingredients. That's because everyone's taste buds are different and some people prefer a mild flavor to their potatoes.
Ingredients:
- A few handfuls of whole new red potatoes, unpeeled.
- Zatarain's Crab boil ( for indoor cooking, use the liquid type)
- Butter
- Black Pepper
- Ball's Cajun seasoning or you can use a little garlic salt and cayenne pepper instead, but you'll need to add salt if you do.
- One yellow onion, cut in halves.
- 1 cup of your favorite white wine.
- Optional link sausage
- Optional bay leaf
Method:
Boil your whole new red potatoes in water with 2 or 3 tablespoons of the liquid crab boil, the wine, some butter, the onion halves, some black pepper and a few shakes of Cajun seasoning or use the garlic salt and cayenne pepper instead of the Cajun seasoning.
I like to add a bay leaf and one link sausage that's been cut into bite sized pieces, too. The sausage really adds a lot of flavor to the potatoes, but some people don't like it.
When they are nearly done, I take them away from the heat, drain most of the water from the pan, leaving a little, then gently cut a few of the potatos in half with a knife, add more butter and sprinkle Cajun seasoning over them again. Then I close the lid and let them sit until they are ready to serve.
Hopefully, I have already prepared a delicious Cajun main dish to go along with the potatoes.
By the way, this easy potato recipe tastes even better as leftovers !
