Boudin Stuffed Jalapeno Peppers
An authentic Cajun dish ?
More like a simple Cajun-Mexican Fusion appetizer that's sure to be a hit at your party. This delightful bacon wrapped, boudin stuffed Jalapeno deep fry creation is one I tried today and it's delicious. It's not my recipe, even though I'd like to take credit for it.
Two of my friends, one a true southern redneck with Cajun roots and the other, a Mexican restaurant owner decided to create this Cajun-Mexican Fusion Boudin dish so we could munch while watching football on Monday night. They were wonderul, so I had to include it in my list of Cajun recipes, even though it's not a true Cajun or Creole dish.
Ingredients:
- A dozen or so large and fresh Jalapeno peppers.
- 1-2 lbs of your favorite Boudin, casing removed.
- Thick sliced hickory smoked bacon.
- Oil
- Toothpicks
Method:
- Blanch the peppers in hot water, then drain.
- Carefully slit each pepper open just enough to remove the seeds and membrane.
- After squeezing the boudin out from the casing, spoon the boudin into each jalapeno pepper, wrap with bacon, securing with a toothpick. Deep fry until the bacon is well cooked, but not burnt.
- For variety, try dipping them in your favorite salad dressing before each bite or turn up the heat by drenching them with Tabasco or Louisiana hot sauce like a true Cajun.
It may sound crazy, but they go well with fried fish... and of course, beer or iced tea.
